The chocolate log tip mold, for 100% in-house production!
Why buy ready-made chocolate log tips when you can make them yourself for much less? Our tray, a transparent thermoformed mold, allows you to make 6 chocolate imprints to make your own chocolate log tips. The molds are made from recyclable APET plastic, in our factory in France. The format of the imprint is half-round, with a smooth finish, without pattern or relief; the heel adapts to the format of the half-round log No. 1.
Dimensions: 8.6x7.4cm x3mm thick. The tray of 6 impressions is 18x29.5 cm, a perfect size to allow you to arrange 4 plates of log heels on a 60 x 40 cm baking tray.
Tip: add an additional decorative touch by poaching with food spray (your brand logo, Christmas motif decoration, etc.), or by adding crushed dried fruits (hazelnuts, almonds, etc.) to the molding stage, for example. .
How to use the log tip mold?
Its use is more practical than stencils (or stencils) for log ends: no need to place a rhodoid under the tray, you can pour your couverture chocolate directly into the impressions.
1. Temper your own couverture chocolate (you can use white, dark or milk chocolate).
2. Mold the chocolate into the indentations, tapping lightly to avoid air bubbles
3. Let the chocolate crystallize in a cool place
4. Unmold carefully so as not to break the tips, and store them between flexible plastic sheets.
You can then carefully clean your trays and store them for reuse later.
